Whenever I have a craving for something sweet, but not super heavy like a lot of traditional desserts, my go-to is rice krispie treats. Packed with sweet and buttery marshmallow, as well as a light and crispy texture from the cereal, these treats are a combo of all things good, and irresistable to kiddos and adults alike.
And while you could just go to the store and buy them, making them at home allows for experimenting to get that perfect ratio of butter, marshmallow, and cereal that makes these treats so good. Every time I make them, I'm reminded of why they were always a favorite when growing up.
The best part is that this recipe is so quick and easy. All it takes is 3 ingredients, and in short time, you'll be able to enjoy some delicious, ooey-gooey, rice krispie treats.

Steps
- On low heat, melt the butter and marshmallows together in a pot on the stove. Stir occasionally to prevent the marshmallows from sticking / burning.
- Once all the marshmallows are melted down, remove the pot from heat.
- Gently stir in the rice krispies cereal 1-2 cups at a time, making sure to coat all the cereal in marshmallow before adding more.
- Once all the cereal is completely mixed in with the marshmallows, transfer the mixture into a greased 9x9" pan.
- Using your fingertips or a greased spatula, gently spread the mixture so that it fills the pan. Try not to compact the mixture too much, or else the treats will be dense instead of light and fluffy.
- My family and I love eating these warm (or maybe it's just a lack of self-control 😆), so we'll typically cut and serve them while they're still warm.
However, you may also choose to let the rice krispies cool to room temp (~30 min) before cutting them into squares and serving.
Note
Once you're comfortable with this recipe, feel free to tweak the ratio of butter, marshmallow, and cereal to suit your tastes!
Storage
To store the rice krispie treats, either cover the pan with saran wrap, or transfer the treats to an air-tight container and keep at room temp. They're best if eaten within 3 days (though they rarely last that long!).
Add-ins
For a bit of fun, feel free to incorporate different flavors, add-ins, or toppings. Here are a few that I've tried:

Add 2 tbsp of instant coffee to the butter-marshmallow mix and thoroughly combine as the marhsmallows melt down. Once the instant coffee has fully dissolved and been incorporated into the marshmallow mix, continue with the remainder of the recipe as normal.
